Spaghetti with Cornish Crab & Cherry Tomatoes

This is a very simple but tasty recipe using only a few ingredients, with the star ingredient being some lovely Cornish Crab meat.


I'm a big advocate of supporting the UK Fishing industry and it is very important for us all to search out our local fishmongers and you can also buy lots of great seafood and shellfish online from sites like Dreckly Fish  and Devon Fish Box.  

 



Serves 2 (or 1 if you are hungry)

Ingredients

  • 150g Fresh White Crab Meat 
  • 200g of dried or fresh spaghetti
  • bunch of cherry tomatoes
  • 1 lemon
  • 2 cloves of garlic, sliced
  • 2tbsp extra virgin olive oil
  • 1 small red chilli, seeds removed and finely sliced
  • seasoning

Method

  1. Firstly put a large pan of salted water on to boil and cook your pasta as per the cooking instructions. 
  2. Pour the oil into a large frying pan or saute pan, and put onto a medium heat, when up to temperature put in the tomatoes whole.
  3. Cook the tomatoes for 7-10 minutes, making sure to keep them moving. We want them nicely blistered, but without any colour.
  4. Now turn the heat down to low and add the garlic and chilli to the pan, and keep stirring for a further 2-3 minutes.
  5. Once your pasta is cooked, drain and add to the pan with the tomatoes, and stir in the crab meat.
  6. Now gently fold the mixture until the crab meat is warmed through, this should take a few minutes. 
  7. Slice your lemon in half and squeeze a bit of lemon onto the pasta and check for seasoning. Add seasoning and more lemon if needed.
  8. Serve and enjoy with a nice cold glass of Chenin Blanc, Sauvignon/Fume Blanc or a Riesling.
