Turkey, Cheddar, Red Onion & Chilli Quesadilla

Serves: 4

Ingredients

  • 4 large soft flour wraps
  • 2 thinly sliced large red onions
  • 1 tbsp chopped red chilli
  • 2 tbsp olive oil
  • 100g strong Cheddar cheese, grated
  • 150g wafer thin sliced ham
  • 150g cooked British turkey, sliced, leg meat is my preference 
  • 2 tbsp roughly chopped, fresh coriander

Method

  1. Gently heat a frying pan over a moderate heat, add the oil, onions and chilli for about 15 minutes.
  2. Spoon onto a plate, wipe out the pan with a paper towel.
  3. Divide the ingredients between the 4 four wraps.
  4. Sprinkle a generous amount of cheese onto one half of a wrap.
  5. Place the ham, turkey, onions and more cheese on top.
  6. Add a little coriander and fold the wrap over, to make a half moon shape. 
  7. Heat large frying pan again and brush lightly with a little oil.
  8. Place 2 wraps into the pan and cook gently over a medium heat for 1-2 minutes on each side, until golden and crisp.
  9. Repeat the process and serve with sweetcorn chutney on the side.
