Sausage Casserole with Baked Beans


Makes 8 portions

Ingredients

  • 16 Thin sausages
  • 115g (4oz) Onions
  • 1 tablespoon Olive  oil
  • 2 x 400g cans Baked beans

Method

  1. Preheat the oven to 200C/400F/Gas 6.
  2. Peel and dice the onions fry in a little olive oil until soft but not brown.
  3. Cut the sausages into 2.5cm (1in) pieces.
  4.  Put the sausage pieces on a lightly oiled baking tray, and bake in the preheated oven for 5–10 minutes until just starting to change colour. 
  5. Add the baked beans to the sausages put into deep tins cover with a lid.
  6.  Bake in the preheated oven for 40–45 minutes.

Serve with mash or jacket potato.
