Fish pie with root veg mash

Ingredients

  • 6kg Mixed fish
  • 8ltr Milk
  • 4 Bay leaves
  • bunch Dill
  • 1kg butter
  • 1kg Flour
  • 2 Onions
  • 10kg Potatoes
  • 3kg Carrot & Swede mix
  • 500g Butter
  • 1pt Milk
  • 1kg Garden peas

Method

  1. Warm milk infused with onion, dill stem and bay leaf take off the heat add fish and cover leave for 20mins
  2. Cook the potatoes and root veg off and mash together with milk butter and season
  3. Make up a white sauce with the infused milk check for seasoning
  4. Add fish, chopped fine dill and garden peas
  5. Cover with root veg mash and bake in oven until core temperature is 75c and golden brown.
