Simple Tomato Soup

Serves: 4

Ingredients

  • 2x 400g tins of chopped tomatoes
  • 1 small potato, peeled and cubed
  • 2 tbsp tomato puree
  • 1 tsp castor sugar
  • 1 onion, peeled and finely chopped
  • 1 clove garlic, peeled and finely chopped
  • 140ml Hillfarm coldpressed rapeseed oil
  • 425ml vegetable or chicken stock
  • Salt and pepper to taste

Method

  1. Heat the oil in a pan and soften the onion, potato and garlic over moderate heat, stirring to ensure they don’t change colour.
  2. Add the tomatoes, tomato puree, castor sugar, stock and seasoning.
  3. Simmer for 20 minutes, then blend with a hand blender
  4. Serve immediately, or freeze for up to 3 months.
