Ingredients
1.5 kg pumpkin, peeled, seeded and cubed
1 tbsp sunflower oil
2 onions, peeled and chopped
2 cloves garlic, peeled and crushed
500ml dry cider
500ml vegetable stock
1 dssp caster sugar
2 tbsp chopped fresh parsley
Salt and pepper
Method
Cook the onions and garlic in the oil for 2-3 minutes.
Add the pumpkin flesh and sugar and season well.
Add the cider and the stock and bring to the boil.
Simmer for 20-25 minutes until the pumpkin is tender.
Liquidise with a soup blender.
Stir in the parsley. |
