Indulge in British food! Seek out in-season fruits and vegetables, quality British meat and some of our country's fabulous cheeses and dairy produce when you are out shopping and use these to create delicious meals at home. What about trying some of our most traditional dishes, such as Shepherd's Pie or Apple Crumble, and giving them a modern twist?!

If you have children, consider involving them in the preparation of the meal - British Food Fortnight is a great opportunity to teach them a few cooking skills as well as an appreciation of the pleasures and health benefits of eating good food.

Mushroom and Garlic Soup PDF Print E-mail

Ingredients
1 tbsp vegetable oil
1 onion, peeled and chopped
500ml vegetable stock
250g white button mushrooms, trimmed, cleaned and sliced
2-3 cloves crushed garlic
Salt and pepper
2 tbsp freshly chopped parsley

Method
Heat the oil in a saucepan and gently cook the onion until soft but not coloured.

Add the mushrooms, half the parsley, the lemon zest and season well

Cook for 3-4 minutes until the mushrooms start to soften.

Add the stock and bring to the boil. Simmer for 5 minutes until tender.

Take off the heat.

Add the crushed garlic and the rest of the parsley.

Liquidise with a soup blender.

Adjust seasoning as necessary.
