Serves 4
Ingredients
4 Maynards Farm Bacon steaks
8ozs Hard Staffordshire cheese
1 Egg
1tbsp Flour for dusting
1tbsp Olive oil
2 Leaves sage
2 Fine diced local tomatoes
¼ pint Chicken stock
Method
Grate the cheese and mix with finely chopped sage leaf and the egg until it forms a batter.
Coat one side of the bacon steak with flour and cover in the batter.
Cook in a pre-heated pan with the batter side down until golden brown.
Turn over and cook slowly until the meat has cooked through.
Remove and keep warm.
Boil chicken stock and add chopped tomatoes, reduce, and serve as sauce. |
