Ingredients:
10 inch of Cumberland sausage
1/4 of a thinly sliced red peppers
1/4 of a thinly sliced green pepper
1/4 of a thinly sliced yellow pepper
1 large clove of fresh garlic peeled & chopped
1 small onion thinly sliced (you can use a red onion for a sweeter taste & colour)
1 tablespoon of crispy onions (these can be bought in tubs in any supermarket)
1/4 of a teaspoon of ground black pepper (use less if you wish)
1/4 of a teaspoon of salt
1/4 of a teaspoon of sugar
1 teaspoon of dried chilli flakes
1 spring onion (ut diagonally into 1 inch pieces
1/2 teaspoon of Worcestershire sauce (light soy sauce can be used)
1 tablespoon of vegetable oil (1 tablespoon to cook the Cumberland sausage and 1 tablespoon to stir fry the vegetables)
Method
Pre cook the Cumberland sausage in 1 table spoon of vegetable oil, bring out of the frying pan and slice diagonally at 45 degrees into 1/2 inch pieces, put to one side.
Place 1 tablespoon of vegetable oil in the frying pan and bring up to medium heat.
Add the chopped garlic and the sliced onions and brown off, add the peppers and stir fry for a further 2 minutes.
Place the sliced Cumberland sausage into the stir fry mixture and then add the ground black pepper, salt, sugar and chilli flakes and stir fry for 2 minutes at medium heat.
Add the Worcestershire sauce (or soy sauce) and stir fry for 1 minute, and add the spring onions, serve.
