Indulge in British food! Seek out in-season fruits and vegetables, quality British meat and some of our country's fabulous cheeses and dairy produce when you are out shopping and use these to create delicious meals at home. What about trying some of our most traditional dishes, such as Shepherd's Pie or Apple Crumble, and giving them a modern twist?!

If you have children, consider involving them in the preparation of the meal - British Food Fortnight is a great opportunity to teach them a few cooking skills as well as an appreciation of the pleasures and health benefits of eating good food.

Hillfarm Chocolate Muffins PDF Print E-mail

(delicious but with 47% less saturated fat of butter)

Ingredients:

2 eggs
250ml milk
125ml Hillfarm rapeseed oil
100g caster sugar
100g brown sugar
2tsp vanilla extract
25g cocoa powder
375g plain flour
4tsp baking powder
1tsp bicarbonate of soda
200g chocolate chips

Method:

Pre-heat the oven to 200C. Place the eggs, rapeseed oil, vanilla extract, sugars and milk in a large mixing bowl and beat together. Sieve in the baking powder, bicarbonate of soda, cocoa powder and flour into the rapeseed oil mixture. Add 150g of the chocolate chips and mix until just blended. Line a muffin tray with muffin cases and fill each case to just below the top with the muffin mixture. Then sprinkle the remaining chocolate chips over the top of the muffins and place in the oven for 20 minutes or firm to the touch.
