Cream of broccoli soup
Take this delicious soup to work and heat it up at lunchtime.Just add crusty bread…..

- 1 small onion, finely chopped
- 1 head Co-op British broccoli, cut into florets
- 750ml vegetable stock, made with 1 stock cube
- 30g herby cream cheese
- Heat 1 tbsp olive oil and 10g unsalted butter in a large saucepan and gently soften the onion for about 10 mins. Add the broccoli and stock, and simmer for 10 mins, until the broccoli is tender. Add the cream cheese, stir and heat through. Puree until smooth, then season to taste.
