200g bulgur wheat
40g flaked almonds
3 tbsp olive oil
1 red onion, finely chopped
2 garlic cloves, finely chopped
1 tsp ground coriander
½ tsp ground cinnamon
½ tsp finely grated nutmeg
1 pinch cayenne pepper
2 chicken breasts (approx 250g)
400g butternut squash
50g sultanas
2 tbsp freshly squeezed lemon juice
1 large handful flat leaf parsley, chopped
Pour 300ml boiling water over the bulgur wheat, cover and leave for about 30 minutes to absorb all the water. Rinse with cold water and drain.
Chop the almonds roughly and toast in a dry, hot pan until golden, and leave to one side. Fry the onion in the oil for five minutes, add the garlic and spices and fry for a further 2 minutes.
Cut the chicken into 1 cm strips and the squash into 1cm cubes. Fry the chicken pieces for 3 minutes, add the squash, turn up the head and fry for a further 3 minutes, stirring constantly. Mix in all the ingredients and season to taste.
