BBQ Suffolk chicken stuffed with Norfolk flat mushrooms

  • 4 boned and skinned Suffolk chicken breasts
  • 100g large Norfolk flat mushrooms, chopped
  • 1 shallot, chopped
  • 2 cloves garlic, chopped
  • 2 tbsp olive oil
  • ¼ lemon, juiced
  • salt & pepper


  • Cut a pouch lengthways in the chicken breast and stuff with ¼ of the mushrooms. Thread a cocktail stick along the edge to hold the stuffing.
  • Combine the shallot, garlic, olive oil, lemon juice, salt & pepper. Pour over the chicken breasts and turn to coat well. Marinate for at least 30 minutes
  • BBQ the stuffed chicken breasts over hot coals for 4 minutes each side. (Raw poultry carries salmonella so it is important the meat is cooked thoroughly. The juices should run clear when pierced with a skewer.)
