Restaurant of the month: Grand Trunk Road
Grand Trunk Road Restaurant in South Woodford offers a unique experience for customers to explore the food from the villages and towns along the 2,500 mile road from Kabul to Kolkata.
The restaurant opened in 2016, with Head Chef Dayashankar Sharma at the helm. Offering the classical cuisine of India, from North, North West and North East of India.
Love British Food spoke to Head Chef Dayashnkar Sharma recently about the restaurant.
Why do you do what you do?
I think myself very lucky to be in the position that I am, and cooking has, and always will be my passion.
What do you enjoy most about your job?
Every day in this job creates a new challenge. I particularly find it enjoyable to have the freedom to create dishes using traditional cooking methods, and to watch people enjoy and appreciate it.
What do you enjoy least about your job?
Even though I'm Head Chef, there's still certain part of preparation that needs to be done in the kitchen, such as vegetable cutting etc - that can sometimes become quite monotonous, however my commute is much worse!
What achievement for the restaurant are you most proud of?
Grand Trunk Road has won 4 very prestigious awards and is very encouraging to my team and me. The other achievement is when diners in the restaurant ask to speak to me and express their satisfaction after their meal.
Do you use British produce?
We are very proud to use British produce, of course some of the spices we use can only be found in India.
What do you think is best about using British produce?
Most important is the freshness and good quality of produce, even though sometimes it may be more expensive. Most important to me that I am supporting British farmers and their produce.
Why should people buy British?
We have to support local business and help the local economy, plus of course the carbon footprint to avoid damage to the environment.
