Restaurant of the month: Addington Equestrian Centre
Paul Capener is the new chef at Addington Equestrian Centre in Buckingham running a 100 cover cafe/bistro style restaurant which has been open since mid-January. Promoting traditional British Fare - the meat, dairy and free range eggs are all sourced as locally as possible using the British farm assured standards and Red Tractor assured schemes. Award winning pies are produced on site using the best of British ingredients.
The restaurant looks out on to the panoramic view of the world class arena where diners can watch some of the best equine athletes and horses competing against each other. It is also open to everyone at all times during every event.
Love British Food met up with Paul to chat to him more about the restaurant.
Why do you do what you do?
British food is a huge part of my life and what a super venue to champion Great British produce. Visitors here really are from a countryside pursuits background.
What do you enjoy most about your job?
Empty plates and people asking where ingredients came from.
What do you least enjoy about the job?
Admin and really early mornings
What achievement for the restaurant are you most proud of?
Silver award in the World Championship Scotch Pie Awards - our first award!
Do you use British produce?
Absolutely, as much as possible - meat, poultry, dairy, flour - all totally British
What do you think is best about using British produce?
Apart from the obvious that it is the best, I love the fact that we are working together. "Field to fork" is the way forward.
Why should people buy British?
We ALL enjoy the views our super countryside gives us but many people do not think of the countryside as the business that it is! I know an awful lot of work goes into keeping it looking so amazing and we should all be supporting our farmers and growers by buying their great produce plus of course locally sourced food tastes amazing!
What is your most popular dish?
Pie, closely followed by traditional English breakfast.
