Producer of the month: Jim Mann, The Birch Syrup Company

We spoke to Jim Mann of The Birch Syrup Company about his business.

It's the first commercial Birch Syrup producer in the UK. After running a small scale successful proof of concept operation in the North Pennines in 2017 the company has expanded to a second much larger site in the Highlands for 2018 whilst continuing with the original site.In 2017 they sold all their produce in just 6 weeks and already have pre orders for one third of all 2018 produce despite scaling up 200 fold this year.

What do you do?

We tap birch trees and collect the sap to make Birch Syrup.

What do you enjoy most about your job?

Working outdoors in nature, enjoy the countryside and the views.

What do you least enjoy about your job!

Definitely the indoor part, particularly the paperwork! It's even worse if the weather is good!

What is your greatest achievement?

We produce a great product in an environmentally friendly way.  We are very proud of our syrup!

Why should we buy British produce?

It reduces the food miles and is so much better for the environment.  I'm an environmentalist and encourage everyone to make even small changes as these multiply up.  Buying British is an easy change to make and not only is it great for the environment but it is good for the economy and for farmers too.  Ultimately, they are the custodians of our environment.

How do you think we should be promoting British?

We need to make the public more aware of the extremely high-quality standards in the UK food industry.  We produce great food here in Britain that is worth seeking out.

If you were an advertising executive what slogan would you use to promote British food?

As you can tell from our name we like the 'does exactly what it says on the tin' approach to promotion so I think we'd go with something very straight forward like 'British is Best'

How can people get hold of your produce?

The best way is from our website: - we will have new stock in March when the trees wake up but it is best to pre-order to avoid disappointment.
